Simply Delicious


One of the biggest setbacks to following Paleo food guidelines is the time commitment. It’s not always easy find something to eat, especially if you’re in a hurry or famished after a strenuous day! One tip to make life easier for yourself is to have items on hand that are already prepared. Keep foods in your fridge that are ready to be heated and eated! Or eaten.


Cooking up some ground beef (or chicken or turkey) and keeping a bag of prewashed lettuce on hand will make for a quick lunch or dinner. Heat your meat, mix with salad greens, and top with all your fave (Paleo) taco toppings and voila! Dinner is served.

Taco Salad

  • ground beef, seasoned and cooked
  • salad greens
  • cherry tomatoes
  • avocado
  • red onion, thinly sliced
  • green bell pepper, small dice
  • salsa (make sure to check ingredients!)

(Also keep some floss close by so you don’t end up with lettuce stuck in your teeth…)


Surviving Survivor Wednesday


Imagine if this was the view you were enjoying while working out? Well, if you were on Survivor, it would be! On the other hand, you’d also be sleep-deprived, starving, and suffering from constant paranoia so maybe the mirrors and surrounding exercise equipment is good enough.

Happy Easter!

EasterHow difficult is it to stay Paleo during a holiday? Sometimes very! It can be almost impossible not to give in to sweet treats or a bite of sugar-sweetened ham (or anything else on the table during a special holiday), but with a little discipline and preparation it is possible!

The key is to arrive at any gathering with a Paleo-friendly dish in hand. That way you always have an option and don’t feel left out of the festivities. Personally, I usually eat a little something before heading out along with bringing a Paleo (or Paleo plus) item to pass.

For example, a caprese salad is so easy to put together and always a hit! With simple ingredients like fresh basil, mozzarella, tomatoes, olive oil, and balsamic vinegar (plus a little salt and pepper to season) it can be made in a matter of minutes right before walking out the door.

Asparagus Salad

  • asparagus
  • dried cranberries
  • pine nuts
  • feta cheese (or goat cheese for a little extra bite)

Lightly steam the asparagus to take away the initial crunch. Slice into inch long segments and toss together with the remaining ingredients. Right before serving, drizzle your salad with a light vinaigrette dressing and enjoy! Simple and yet, so delicious! Make sure to prepare extra though, because I doubt you’ll want to share…

The Essentials of Life

Okay, time to talk about more “plus.”

“Plus” items or activities are the extras that give you an added boost of happiness in your day! It can be something as simple as listening to your favorite song or enjoying a few yoga stretches right before bed.

Among other things (most of which are listed under “Things I Love”), essential oils are one of my plus items. I’m still fairly new to the E.O. world, but the more I read and learn, the more I want to know. There are countless blends and mixes that can be put together to help with any imaginable need. I use my oils for everything from congestion relief to muscle aches to relaxation and many other things in between!


The key to essential oils is making sure you’re using high quality oils that don’t contain extra fillers.  It would be like substituting a Snickers bar for an all-Paleo protein bar before a workout!  Sure the candy bar smells and tastes good, but will it have the same effect on your body? I think not.

I start each morning and end each evening with my oils and keep them with me all throughout the day. Lately, my favorite blend to help awaken the mind and body is a half and half mixture of lemon and peppermint. I get my diffuser going first thing while I’m doing morning yoga and by the time my 15 minute routine is over, I’m ready for a new day!

It’s Zumba Time!

Hey, so remember on Friday when I said, “Take a new class this weekend!”? Show of hands? Well, I did!


However, the class I took (that I’ve been preparing for over the last month or so) was a certification class to become a Zumba instructor! We were privileged to have Aileen Padilla as our own instructor and it was such an amazing opportunity. I’m pumped up and ready to begin teaching!

Friday Challenge

I’m not sure who else is still sore from Wednesday, I know I am! But it’s that satisfying kind of sore where you can feel your muscles building and working hard.

Today won’t be as intense, but still push yourself for the last weekday workout!

  • 5 minutes rowing
    • 15 pushups
    • 15 crossfit situps
    • 15 lunges (each side)
  • 5 minutes treadmill
    • 15 kettlebell swings
    • 15 leg kickbacks
    • 15 knee to elbow side crunch (each side)
  • 5 minutes rowing

And today’s extra assignment is to take a class over the weekend that you’ve been wanting to try but have been too afraid to do!  Even if you go alone, just take my sock’s advice and…
